All Romance Options in Kingdom Come: Deliverance 2
Excluding the bathhouse ladies, six romantic interests are available. While most offer brief encounters, a couple feature more extensive storylines.
The potential romantic interests are: Rosa, Klara, Lousy Mary, Johanka, Black Bartoush, and Doubravka. Detailed instructions on how to pursue each are provided below.
One-Night Stands

Doubravka: During the "Wedding Crashers" main quest, speak to Doubravka's mother near the courtyard entrance. She'll request you dance with her daughter. Select the dialogue options: "Don't worry about the people," "You dance like an elf," and "I see. Let's go then." This leads to a romantic encounter.

Black Bartoush: In the "For Victory!" quest at Trosky Castle, speak to Black Bartoush. Choose the options: "I reckon I know what you're getting at" and "Shall we spend the rest of the evening alone?"

Bathhouse Ladies: Major towns and settlements have bathhouses. Paying the maids for their services provides clean clothes and the "Time Well Spent" buff, boosting Strength, Agility, and Vitality. This buff is gained from any romantic encounter, not just those with bathhouse ladies.
Romancing Klara
Klara's romance involves a more complex questline. During the "Back in the Saddle" main quest, after the duel with Michael, speak with Klara and inform her about the knights. She'll invite you herb picking.
Choose the options: "I can't say no to a comely lady" and "I think she's called Klara." Proceed with the main quest until the pistol tutorial. Help Klara at the jail cells, either by persuading the guard or fighting him.
Assist Klara in treating the prisoners Mark and Zwerk, using Schnapps and bandages. For Mark, provide Schnapps and a bandage; for Zwerk, give Schnapps, bandages, wine, and Chamomile Brew. Finally, speak to Klara at her house and proceed to her bed.
